I am taking today's description directly from my daughter-in-law's Facebook post. She was attending a baking school where one of the early confections she learned to make was this French cookie. Here's what she says about the experience.
"If you want to test how much I like you as a person, ask if I will make you macarons for your birthday. Macarons are an incredibly finicky cookie, where you spend significant time and effort whipping air into your eggs whites making a merginue, then after you add the almond flour and sugar, you spend significantly more time and effort deflating the batter of that air (which is called macronage). But you only want to deflate it the exact right amount. Just the exact right amount, not too little or too much. And then after all that, there is STILL piping out all the individual cookies, baking, making a filling [ganache], and then piping in the filling. So while I actually do think I learned enough and I have the skills to make these again, they are definitely special occasion only."
