A basket of Madeleines rests on a table, the cloth napkin lining open as if inviting guests to help themselves. These classic French treats are a cross between a cookie and a cake. A special mold pan gives them the scalloped, shell shape you see here on one side; if properly prepared and baked, the other side has a pronounced hump. Though they can be garnished with chocolate or dipped in a lemon glaze, they are most often simply sprinkled with powdered sugar. There are many legends surrounding the name of this popular dessert or tea cake, most often associated with the town of Commercy in the Lorraine region of France.
